Kenya AA has held its place among the world's most respected coffees for a reason, and Kericho sits right in the middle of the reason why. Rift Valley soil, dense volcanic red clay, and elevation above two thousand meters give this region what much of Kenya's coffee industry is built on, and this lot leans on that reputation as an SL28 variety. Washed and dried slowly on raised beds, the way most of Kenya's best coffee has been processed for decades, it earned the AA grade on screen size alone, the largest and most prized beans this region produces. In the cup, red plum and medjool date lead into cranberry, with panela rounding things out at the finish.
COFFEE PROFILE
Medium bodied with a crisp, citrus forward acidity typical of high grown Kenyan coffee. Red plum opens the cup, medjool date settles underneath, and cranberry brightens the middle before panela brings a warm, unrefined sweetness to close it out.
BREWING
Dose: 24g coffee, medium grind
Water: 360g, just off boil
Bloom: 30 seconds with 50g water
Pour: Slow circles to 200g, then finish to 360g in two more pours
Total brew time: 3:00 to 3:30
