Honduras - Comayagua Coffee
Grown in the mountainous interior of Honduras, this Guama Danta lot comes from the diverse region of Comayagua, where elevations between 1,250 and 1,450 meters create ideal conditions for slow cherry development. Warm days and cool nights allow sugars to build gradually, producing denser beans and a cup with both sweetness and structure.
Rather than a single estate, this coffee represents the combined work of multiple farmers. These family-run plots are often cultivated for generations, with coffee grown under shade alongside food crops and native trees. Community lots like this reflect a shared commitment to quality, allowing smaller producers to access specialty markets while preserving traditional farming practices.
The variety is Lempira, a Honduran-developed Arabica cultivar named after the indigenous Lenca leader who resisted Spanish colonization. Bred for resilience against coffee leaf rust and challenging growing conditions, Lempira has played a crucial role in sustaining Honduras’ coffee industry over the past decades, helping farmers protect their livelihoods while continuing to produce high-quality coffee. Its dependable yields and balanced cup profile have made it one of the country’s most important working varieties.
Harvest takes place from December through March, with cherries picked selectively at peak ripeness. After harvest, the coffee is fully washed, a process that removes the fruit before fermentation and drying. This method emphasizes clarity and balance, allowing the natural character of the region and variety to shine through.
Comayagua is one of Honduras’ most productive and varied coffee regions, shaped by a patchwork of microclimates and soils. Coffees from this area often show a harmonious balance of brightness and body, reflecting both elevation and landscape diversity. Over the past two decades, Honduras has emerged as one of Central America’s most dynamic specialty origins, driven by improvements in processing, infrastructure, and cooperative organization among producers.
In the cup, Guama Danta offers a rich and approachable profile. Notes of dark cherry and red apple provide a rounded fruit sweetness, while molasses adds depth and warmth. A creamy hazelnut finish brings everything together, creating a coffee that is both comforting and refined.
