Ethiopia - Limu Seka Coffee

From the highlands of western Ethiopia comes a coffee that reaches back to coffee’s earliest roots. Ethiopia is widely regarded as the birthplace of Arabica, where coffee still grows in wild and semi-wild forests and where cultivation has evolved over centuries rather than decades. This lot comes from Limu Seka in the Oromia Zone, a region respected for producing coffees that are refined, balanced, and deeply expressive.

 

Grown at elevations up to about 2,200 meters, the trees develop slowly in cool mountain air, frequent mist, and intense equatorial sunlight. At these heights, cherries build complex sugars and aromatics while maintaining a clean, tea-like structure. The result is a coffee with remarkable clarity and lift, shaped as much by altitude as by soil and climate.

 

Processing takes place at the Feyisa Abamecha Washing Station, where cherries from surrounding farms are delivered daily during harvest. Each lot is tracked through intake, fermentation, drying, and storage, preserving a clear connection back to the producers. After pulping, the coffee ferments in water to remove the fruit layer before being washed and dried on raised beds until stable. This washed approach highlights the inherent character of the highland terroir, emphasizing florals, brightness, and precision.

 

The trees themselves are indigenous Ethiopian landrace varieties. Rather than a single named cultivar, these are locally adapted populations shaped by generations of natural selection and traditional farming. This genetic diversity is one reason Ethiopian coffees can express such distinctive aromatics and nuanced flavor profiles compared to more standardized varieties grown elsewhere.

 

Harvest occurs from November through January, when ripe cherries are selectively picked and delivered to the mill the same day. Careful drying and conditioning preserve the delicate qualities developed at altitude, allowing the coffee to arrive vivid and stable.

 

In the cup, this Limu Seka lot is light, clean, and layered. White pear gives a gentle fruit sweetness, supported by soft honey notes. A subtle rose-like floral character appears in the aroma, while a green tea finish keeps the coffee crisp and refreshing. The acidity is bright but brings clarity without harshness.
