Brazil - Cerrado Coffee

Grown in Brazil’s Cerrado region, this Salmo Natural lot highlights a more intimate side of an origin often associated with scale. Sourced from select small producers working within this sun-drenched savannah landscape, the coffee reflects careful cultivation, patient harvesting, and a focus on quality over volume. At roughly 1,200 meters above sea level, warm days and cool nights allow cherries to ripen slowly and evenly, building deep sweetness while preserving balance in the cup.

 

This lot leans heavily on the Mundo Novo variety, a classic Brazilian Arabica known for its vigor, resilience, and rich, approachable flavor profile. Originally developed from a natural cross between Bourbon and Typica, Mundo Novo has become a cornerstone of Brazil’s specialty community. Rather than chasing exotic acidity, it excels at structure, body, and comforting depth.

 

Processing is fully natural, one of Brazil’s signature methods. Cherries are harvested at peak ripeness and dried whole under the sun on open patios, allowing sugars to seep into the seed as the fruit slowly dehydrates. This extended contact between bean and pulp creates a fuller mouthfeel and layered sweetness that defines many of Brazil’s most beloved coffees.

 

The Cerrado itself is a relatively recent coffee frontier. After severe frosts devastated traditional growing areas in the 1970s, producers moved into this previously undeveloped interior plateau, discovering a climate remarkably well suited to coffee. Abundant sunlight, predictable rainfall patterns, and dry harvest seasons make it possible to produce clean, consistent natural coffees with remarkable reliability. Harvest runs from July through September, during Brazil’s winter dry season, when conditions are ideal for patio drying. Careful sorting after processing ensures uniformity and clarity, preserving the integrity of the lot from farm to our roasting lab.

 

In the cup, this coffee expresses the plush sweetness and body that have made Brazilian coffees foundational to specialty roasting. Notes of plum bring a dark, jammy fruit character, while brown sugar adds warmth and roundness. A creamy peanut butter note enhances the feel and finishes with a note of cacao. The result is a coffee that feels deeply satisfying and balanced while offering an incredible base for our SUPER OMNIA and ILLUMINATE signature coffees.
